Lentil stew with root vegetables and poached egg

  • This recipe contains a good amount of carbohydrates, protein and vegetables, so it can be considered a balanced meal according to the food pyramid. The high dietary fiber content of the lentils and vegetables means that blood sugar levels rise slowly – an ideal meal for people with diabetes.

    The high fiber content of lentils and vegetables contributes to a slow rise in blood sugar levels. This helps to control the rise in blood sugar after eating, which is an important goal of diabetes management.

    With 60 grams of carbohydrates, mainly from lentils, potatoes, parsnips and other vegetables, this meal is a good alternative to bread, especially for those who want to reduce their carbohydrate intake. In addition, the composition of the meal ensures long-lasting satiety, which helps to prevent cravings.

    Ingredients for two persons
    • 1 clove of garlic

    • 150 g carrots

    • 160 g potatoes

    • 100 g celeriac

    • 150 g parsnips

    • ½ onion

    • 3 tbsp olive oil

    • 2 tbsp tomato puree

    • 1 tsp each mild and hot paprika powder (2 hot or 2 mild, depending on preference)

    • 120 g brown lentils

    • 1 tsp thyme

    • 2 bay leaves

    • 1 clove

    • 500 ml vegetable stock

    • 2 eggs

    • salt

    • pepper

    Preparation

    Peel the carrots, potatoes, celery, parsnips and onion and cut into small pieces. Heat the oil and sauté the vegetables for about five minutes while stirring. Add the tomato puree and fry briefly. Sprinkle with both paprika powders. Add the lentils, spices and stock, bring to the boil. Peel and crush the garlic clove and stir into the stew.

    Simmer everything over a low heat for 20 minutes. After ten minutes, carefully add the two eggs to the pan and do not scramble them so that the eggs cook completely.

    Tips and tricks

    The poached egg can be replaced with some smoked tofu, a little meat (ham/rolled ham/simmered meat/sausage) in the stew or with cheese/cottage cheese as a protein side dish. The lentils alone would also just about cover the protein requirement.
